Homemade Mediterranean Pizza Recipe

Ingredients

  • 1 cup warm water
  • 1 package active dry yeast
  • 1 ½ cups unbleached all-purpose flour
  • 1 cup whole wheat flour
  • 2 tbsp. olive oil
  • ½ tsp. salt
  • 1 tbsp. honey
  • 1 cup chopped tomatoes
  • 4 chopped dried figs
  • ½ cup shredded Prosciutto
  • ¼ cup finely grated Parmesan
  • ¼ cup fresh mozzarella
  • ½ cup crumbled Gorgonzola
  • Sprinkled rosemary
  • Sprinkled garlic

Directions

  1. Combine the water, yeast, and all-purpose flour in a large bowl and mix together. Add the salt and oil, and gradually add the whole wheat flour to the bowl. Work the ingredients together until the dough holds its shape. 

  2. Place the dough on a lightly floured surface and knead until elastic (roughly 5 minutes).

    Transfer the dough to a lightly oiled bowl and cover with a towel. Let rest for 1 hour (or until dough has doubled in size). 

  3. When risen, place the dough back on the lightly floured surface; divide the dough and role into balls. Cover the dough with a towel again and let rest for 15 – 20 minutes.

  4. Shape the dough and preheat the oven to 500 degrees. Place the two pieces of dough on a pizza stone lightly covered with oil and cornmeal.

  5. Sprinkle on the tomatoes, followed by the gorgonzola, parmesan, mozzarella, and prosciutto, then top with rosemary, garlic, and figs. Place in the oven and bake for roughly 20 minutes or until lightly browned!
